Pomme surprise !

Surprise apple!

Ingredients for 2 people:

2 “Canada Gris” apples (a little more tart)


2 “pippin queen” apples (a little sweeter)

10g dried cranberry

2 Medjool dates

20g pecans

1 tbsp. Maple syrup

1 tbsp. cane sugar

1 tsp cinnamon

¼ tsp nutmeg

1 C. teaspoon of Zero Worry Powder 

For the Chantilly cream:

10cl of whipping cream and 1 tbsp. heaped teaspoon of icing sugar

Feel-good ingredients

  • Apple provides fiber and quercetin, a powerful antioxidant
  • Cranberries are an exceptional source of antioxidants and rich in vitamin C
  • The date is rich in fructose, dextrose, sucrose, maltose... carbohydrates which are real sources of energy for the body. The date is also a source of trace elements (it contains copper, zinc and even iron), amino acids, antioxidants and minerals (potassium, magnesium, phosphorus).

Heat the fan oven to 180°

Stuff the apples

Lay the apples flat, cut the top quarter, and remove the core/seeds (you can use a small spoon for the melon balls for this for example!). Place them, hole side up, in a baking dish.

Crush the pecans into pieces. Chop the cranberries and dates, and add ¼ tsp. of nutmeg and ½ tsp of maple syrup. Mix everything well.

Mix the cane sugar with ½ teaspoon of cinnamon. Sprinkle the tops of the apples with this sugar/cinnamon mixture.

Stuff the apples with the chopped dried fruit mixture.  Bake for around 20 minutes. After 20 minutes, add the “cap” of the apples with a brush of maple syrup on them. Leave in the oven for another 10 minutes…

Make your whipped cream…

While the apples are cooking, prepare the whipped cream, by whipping the very cold whipping cream, with the icing sugar, and the tbsp. of Zero Worry Powder .

Reserve in the fridge.

When the apples are out of the oven, let them cool for ten minutes, dress them with a spoon of whipped cream, and savor the fondness of the apples, the flavor of the spices and dried fruits, the creamy freshness of the whipped cream... Hummmm !
